Nothing compares to a home-baked cake and this is one of our favourites. Cider and apples give this a scrumptuous autumn feel. It's delicious eaten straight from the plate but to make it more of a dessert, serve it with cinnamon-scented cream.


  • 300g plain flour

  • 2 tsp baking soda

  • 1 tsp mix spice

  • 1 tsp cinnamon

  • Pinch grated nutmeg

  • 4 British apples like Cox or Braeburn, peeled and grated

  • 150g soft dark brown sugar

  • 150g melted butter, unsalted.

  • 2 eggs

  • 330ml British cider, reduced by 2/3- (in a pan for approx 5-10mins)

  • 200g golden sultanas

  • 100g chopped pecans

  • To serve

  • 250g mascarpone cheese

  • Splash of double cream

  • 1 tsp ground cinnamon


  • 1.

    Sift the flour, baking powder, mixed spice, cinnamon and nutmeg into a bowl.

  • 2.

    In a separate bowl, mix the apple with the sugar and butter. Add egg and cider and mix well. Mix into the dry and fold in sultanas and nuts. Spoon into the tin and bake at 180c for 45-60 mins. Turn out and cool.

  • 3.

    For the mascarpone, simply whisk the three ingredients together and spoon alongside.
