An eye catching dessert of baked apple puree, whipped cream and light as air egg whites.
Place the apples, cinnamon and a pinch of sugar into a pan and cook until the apples soften, then pass through a sieve and allow to cool.
Whip the cream into soft peaks and whisk the egg whites along with a little sugar until it forms stiff peaks. Fold in the cream and egg whites to the apple mixture and serve in a bowl.
