This super simple breakfast is the perfect way to start the day.


  • 1.5 tbsp chia seeds

  • 1/2 cup coconut milk (from carton)

  • 1/2 tsp rice malt syrup

  • 1/2 tsp vanilla extract

  • 1.5 tbsp almonds, raw and unsalted, chopped

  • 1/2 tbsp coconut flakes

  • 1 tsp cacao nibs

  • 1/4 cup raspberries (fresh or frozen)

  • 1 tbsp pepitas (pumpkin seeds)


  • 1.

    Combine chia seeds, coconut milk, rice malt syrup, vanilla and almonds in an airtight container,

  • 2.

    Stir thoroughly and soak overnight. You may need to check on it once or twice and stir again.

  • 3.

    Place in a jar or glass and top with cacao nibs, coconut, raspberries and pepitas.
