Ingredients

  • Classic Prawn Cocktail

  • 16 cooked tiger prawns, peeled and cleaned

  • 1 head baby Cos

  • 2 cukes (baby cucumbers), thinly sliced

  • 200g grape tomatoes, sliced

  • 1 ripe hass avocado, sliced

  • Classic Dressing

  • ½ tsp paprika or ¼ tsp cayenne

  • 1 tsp worcestershire

  • 2 tbs tomato sauce

  • 1/3 cup mayonnaise

  • ½ lemon, juiced and zested

  • Middle Eastern Prawn Cocktail

  • 16 cooked tiger prawns, peeled and cleaned

  • ¼ cup pomegranate seeds

  • ¼ cup slivered almonds, toasted

  • ½ bunch parsley, leaves picked

  • ½ bunch mint, leaves picled

  • 50g rocket leaves

  • 2 tsp zaatar

  • Middle Eastern Dressing

  • ½ cup yoghurt

  • 1 lemon, zested and juiced

  • 1 tsp harissa

  • 1 small garlic clove, crushed

  • Pinch ground cumin

  • Asian Prawn Cocktail

  • 16 cooked tiger prawns, peeled and cleaned

  • 4 spring onion, sliced,

  • 2 tsp Black and white sesame seeds

  • 150g Edemame beans

  • 1 bunch coriander, leaves picked

  • Asian Dressing

  • 2 tbs rice wine vinegar

  • 2 red chillies, thinly sliced

  • ½ cup kewpie mayo

  • 1 lime zested and juiced

  • 1 tbs soy sauce

Method

  • Classic Prawn Cocktail:

  • 1.

    For the dressing combine the paprika, tomato sauce, mayo, zest and juice of the lemon, season and set aside. Layer the prawns, cos, cucumber, tomatoes, avocado and the dressing in glasses.

  • Middle Eastern Prawn Cocktail:

  • 1.

    For the dressing combine the yoghurt, harissa, lemon zest and juice, garlic, cumin and season. Layer the prawns, parsley, mint, pomegranate seeds, almonds, rocket, zaatar and the dressing in glasses.

  • Asian Prawn Cocktail:

  • 1.

    Combine chillies and vinegar and set aside.

  • 2.

    Combine the kewpie, lime juice and soy sauce. Layer the prawns, spring onion, sesame, edemame, coriander and the dressing in glasses.
