These burgers are made using your leftover ham from Christmas. You're guaranteed to love them!
Heat olive oil in a pan over medium heat. Fry eggs until they begin to set and then top with cheese, cook until melted but eggs are still runny.
Half the buns and spread the bottom of each bun with one tablespoon of tomato relish. Top with ham, then place the egg & cheese on top.
Finish with tomato and rocket and spread the lid of the bun with one tablespoon each of mayonnaise.
Optional: toast buns under the grill
