Combine the pork belly, soy sauce, and garlic then marinade for at least 4 hours, overnight is better
Heat the pot add some olive oil, pork belly and onions then cook for a few minutes, Browning the meat a a high temp.
Reduce temp and add the marinade, cook for 5 minutes at low temp
Add water, whole pepper corns , oyster sauce, dried bay leaves then bring to a boil. Simmer for 40 minutes to 1 hour to reduce liquids by half
Add in the vinegar and simmer for 15 to 20 minutes
Add salt to taste
Serve hot with steamed rice
