On this episode of Come Dine With Me Australia, Sami Dawson prepares a classy and delicate salmon dish that looks just as good as it tastes...
Lightly coat the salmon with sesame seeds on the skin side oil and season with salt on the other side, transfer to a plate and rest for 1 minute covered with foil.
Heat some more oil in a frying pan over a medium heat and cook the salmon skin side down for 1-2 minutes, or until the skin is golden, then flip the salmon over and cook for a further 2 minutes.
To make the pea puree, blanch the peas in boiling water, refresh under cold water.
Place the peas in a blender and add the water, with salt and pepper.
Pass through a sieve to allow the puree to become smooth, and then set aside.
Fennel Salad :
To make the salad combine the radish, fennel, parsley, watercress and onion, add the lemon juice, olive oil and season with salt and pepper, toss well.
Serving suggestion :
Spread two tablespoons of the pea puree onto each serving plate. Place the salmon on top, place the salad on the sesame side spilling out onto the plate and a few drops of quality extra virgin olive oil for presentation.
