  • ¾ cup (180ml) cream

  • 125g good quality dark chocolate, chopped

  • 1 tablespoon (20ml) Cointreau

  • Cocoa, for dusting or rolling

    Pour cream into a small saucepan and bring to the boil over medium heat. Simmer until thick and bubbly and reduced by about half. Remove from heat, add chocolate and stir gently until the chocolate has melted and the mixture is smooth. Stir in liqueur. Pour into a glass bowl and refrigerate until set, stirring occasionally so it sets evenly.

    Spoon into a piping bag and pipe into small paper cases and dust with cocoa. Alternatively, scoop heaped teaspoons of the mixture and roll quickly into balls with cocoa.

    Serve immediately or store in a single layer in an airtight container in the refrigerator.
