Try this simple and delicious pudding recupe for your festive feast!


  • 2 x 170g Sunsweet Mango pieces, chopped pkts

  • 250g dates, chopped

  • 150g currants

  • 1 cup brown sugar

  • 250g butter, chopped

  • grated zest and juice of 1 orange

  • 180g Riverside Whole Macadamia Nuts, chopped

  • 4 Coles Brand Free Range Eggs, lightly beaten

  • 1½ cups soft fresh breadcrumbs

  • 1½ cups self-raising flour, sifted

  • custard, to serve

  • double cream, to serve


  • 1.

    Place mango, dates, currants, sugar, butter, orange zest and juice in a medium saucepan. Bring to boil, stirring occasionally, until butter has melted and sugar dissolved. Transfer to a large bowl. Add macadamias and set aside to cool.

  • 2.

    Generously grease a 6-cup metal pudding steamer. Line base with a circle of baking paper.

  • 3.

    Stir beaten eggs through fruit mixture and mix well. Fold through breadcrumbs and flour. Spoon into prepared steamer, packing down firmly as you go. Cover with a circle of buttered baking paper and steamer lid. Stand pudding on a trivet inside a large saucepan or stockpot. Fill with enough hot water to come ²⁄3 up side of basin.

    Cover and simmer for 2 hrs, topping up with boiling water as needed. Remove basin from pan, cool completely and store in refrigerator until Christmas Day.

  • 5.

    To reheat, boil pudding, using above method, for 30 mins. Serve in wedges with custard and double cream.

This pudding is AMAZING !!. Ive made it as out christmas pudding for many years. I even make it when its not Christmas. The mango and nuts just make for a beautiful texture. The taste is to die for and the smell while cooking is divine. Its a nice moist recipe and its relatively easy to make.

I made this for christmas 2012 and everyone loved it. I did made a few changes though. I added a large mango instead of 1 pkt dried mango and sultanas instead of raisins. Also added about 1/3 cup of Butterscotch Schapps. Now everyone wants the recipe.

I made this for christmas 2012 and everybody loved it and wants the recipe. I did change it a bit by putting a very large mango replacing 1 pkt of the dried mango and also I put sultanas instead of raisins. I also added about 1/3 cup of Butterscotch Scnapps to fruit mix when I heated it up.

how long will these puddings keep for - how long ahead can you make them?

if using a steam oven is the cooking time required still 2hrs ?
