cottage and ricotta

In layman's terms can you tell me what the difference is between cottage and ricotta cheese. Thanks heaps. Have a great Festive Season.

Answered Monday 9 February 2015

Hi Julie,

I apologise for taking so long to answer your question, I’ve been very busy on the farm!

Cottage cheese is a fresh curd cheese with some of the whey remaining, hence the moist texture. Ricotta is made from whey itself. When making a fresh milk cheese the casein protein is coagulated to make a curd, the whey is separated. To make the ricotta the coagulation process is repeated though this time the focus is on the remaining proteins albumin and globulin. So basically curd and ricotta are very similar, one is made from milk and the other is made from whey.

I hope this makes sense!!

All the best,

Paul
