I was a foodie long before being a foodie became trendy. I love uncomplicated food using excellent quality ingredients but I also love a challenge.

Hi Jacki, sounds like you may have cooked it a little too long or at too high a temperature. The portions I used were large and quite thick. Next time try lowering the temperature and not overcooking. Salmon has a delicate flesh which does not respond well to overcooking. It will continue to cook through when you remove from the heat so you can afford to leave it looking a little uncooked in the centre.
